Spinach Stuffed Mushrooms

Ingredients:

  • 1 package of Small Crimini Mushrooms
  • 1 package of Organic Spinach
  • 1/2 cup dry Breadcrumbs
  • 3 large cloves of Garlic
  • 1/4 cup Parmesan Cheese
  • 1/2 cup Shredded Mozzarella
  • Olive Oil
  • Salt & Pepper

Preheat oven to 350 degrees.

Wash and remove stems from Mushrooms. Set aside. In a blender or food processor, blend together spinach, olive oil, garlic and breadcrumbs. Remove mixture, add Salt & Pepper, 1/4 c. Mozzarella cheese & all of the Parmesan cheese. Mix together.

Douce mushrooms with olive oil and fill each with spinach mixture. Top each mushroom with remaining mozzarella cheese. Bake for 15 minutes. Enjoy!

A new take on Lox

Ingredients: 

  • Hash Brown Patties (6 will serve a couple people)
  • Cream Cheese
  • Green Onion
  • Smoked Salmon
  • Salt & Pepper
  • Capers (optional)

Cook hash brown patties until crispy on each side. Lay flat down on a paper towel to absorb olive oil. Spread a thin layer of cream cheese on each hash brown. Place pieces of Salmon on top of the cream cheese. Top with diced green onion, capers, salt & pepper.
