Slice onion into half rings and place in frying pan with olive oil. Heat on medium for 5 minutes, add brown sugar. Heat on low for 20 minutes, stirring often.
Place tortilla on heat and top with goat cheese and colby jack; top with caramelized onions, add remaining cheese on top; season salt & pepper. Place top tortilla. Flip tortilla when bottom is browned. Cook on medium/low heat until both sides are golden brown and cheese is melted.
Remove from heat and cut into quarters.
Serve with salsa, guacamole or sour cream
