Chewy Soft Molasses Cookies



1 3/4 cups flour

1 teaspoon ground cinnamon (pumpkin pie spice works too!)

1/2 teaspoon baking soda

1/2 teaspoon ginger (fresh ground is best!)

1/4 teaspoon sea salt

6 tablespoons butter, softened (substitute coconut oil)

1/4 cup brown sugar (plus extra for topping cookies)

1 latge egg

1/4 cup molasses

2 large mixing bowls

1 cookie baking sheet


Preheat oven to 350 degrees.

Spoon flour into dry measuring cups; level with a knife. Combine flour and next four ingredients (through salt) in a bowl, stirring with a whisk.

Place butter and brown sugar into a different bowl. Beat with a mixer until fluffy. Add egg ; beat 30 seconds. Add molasses; beat until combined. Add flour mixture to butter mixture; beat until combined. Cover and chill for 30 minutes.

Shape dough into small balls. about 1 1/2 teaspoons each. Roll balls in brown sugar; place 2 inches apart on the baking sheet. Bake at 350 degrees for 8-10 minutes or until cookies set.

Remove to a wire rack.


P.S. I like to add honey and agave to the wet mixture. Instead of using regular granulated sugar for a sweetener, it adds the perfect sweetness to the cookies. Throw som
