1 bag organic corn
2 cans organic black beans
1 whole organic red pepper (diced)
1 large organic tomato (diced)
1 whole organic avocado
1 organic lime
1 bag organic cheddar cheese
1 handful organic cilantro (chopped)
Organic black bean tortilla chips
Salt & Pepper to taste
3 tablespoons water
1 large baking dish
Preheat oven to 425 degrees.
Layer 1: Black beans; squeeze 1/2 lime over black beans.
Layer 2: Corn & Cilantro
Layer 3: 1/4 bag Cheese
Layer 4: Peppers and Tomatoes
Layer 5: Remaining cheese. Season top with salt & pepper, drizzle water on top of entire casserole.
Bake in oven at 425 degrees for 30-40 minutes. Serve in bowl; top with cilantro, avocado slices and crushed tortilla chips.
Tip: Top with salsa verde for an extra boost of flavor! Makes great leftovers 🙂
